Timpana
Ingredients:
1 pound of Pasta
3 table spoons tomato paste
2 large onions
6 eggs
250g grated cheese
vegetable oil
fat
4 fresh cheeselets
Procedure:-
1. Fry the chopped onions together with the oil and fat. When the onions soften, add the tomato paste together with some water.
2. Mix well together and leave on low heat for a few minutes. Then remove the heat.
3. Cook the pasta in boiling water with salt for about 10 minutes, then rinse well from the water.
4. In the same pot, mix together the pasta with the tomato sauce, eggs, grated cheese and fresh cheeselet, whilst heating on very low heat. Cook for about 5-10 minutes.
5. Stir continuosly to avoid over-burning.
Serve warm.
