STUFFED PEPERONI
Ingredients:-
4 small green peproni
1 teaspoon crushed sardines
100g (4ozs) fresh cream
100 (4ozs) grated cheese
2 tablespoons vodka or gin
30g (1 1/4 ozs) butter
1 tablespoon flour
salt, crushed pepper and nutmeg
Procedure:-
1. Cut off the head of the peperoni, remove their seeds and rinse well,
2. Melt the butter in a saucepan, and gradually add the flour whilst stirring thouroghly. Add the sardines, cream and vodka or gin, and continue stirring. Cook on a very gentle flame for 10 minutes, and then let it cool down.
3. Warm the oven at gas mark 6, and place a dish with a little oil in the oven.
4. Stuff the peperoni with the filling cooked in step 2, then place them in the oven dish, and cook for 40 minutes
Serve whilst hot.
